Ingredients:  
Ingredients:  
¼ cup of tomato puree
½ cup of tomato paste
5 fresh tomatoes pureed
1 yellow onion pureed
2 garlic cloves chopped
yellow corn tortillas (3 cut)
2 oz. of chile powder
½ T of ground cumin
½ T of cayenne powder
1 T of sugar
3 qt. of chicken stock
1 oz. of salad oil
salt as needed

Directions:

In stock pot, heat oil, tortillas, and garlic

Add chili powder, cumin, and cayenne powder - sauté for 2 minutes

Add onions and fresh tomato puree - sauté for 5 minutes

Add chicken stock, canned tomato paste and puree - simmer for 1 hour

Finish with salt and sugar

Garnish with roasted chicken (cut in medium dices), diced avocados, sour cream, crumbled queso fresca, salsa fresca, and fried tortilla strips

When we traveled to Mexico on buying trips for our import business, we loved the tortilla soup they served there. When we moved to Green Valley, Arizona we found the best ever tortilla soup at the Desert Diamond Casino's Agave Restautant. Karen asked the maître d' if she could possibly get the recipe for the soup and he gave us a recipe card from the executive chef, J. Ramon Delgado. This is a copy of that recipe.
