1 pkg (12oz) jumbo pasta shells
1 pound Italian sausage
1 jar (32oz) spaghetti sauce
2 pkgs (10oz each) frozen chopped spinach, thawed
2 eggs
1 pound Ricotta cheese
1 tsp onion salt
¼ tsp garlic powder
⅛ tsp nutmeg
½ pound shredded mozzarella cheese
2 Tbsp. Parmesan cheese

Directions:
Directions:
Cook shells according to package directions until just done.
Crumble sausage and brown in pan; drain well; add sauce and simmer 15 minutes.
Squeeze excess moisture out of spinach.
In a large bowl, lightly beat eggs.
Add spinach, ricotta, mozzarella, onion salt, garlic powder, and nutmeg; mix.
Preheat oven to 350º.
Spread ½ - 1 cup sauce in the bottom of a 9x13" baking dish.
Stuff each shell with 1-3 Tbsp.s cheese and spinach filling.
Arrange in a single layer in baking dish.
Pour remaining sauce over shells.
Sprinkle with Parmesan cheese.
Bake 30 minutes.

May be refrigerated or frozen before baking. If refrigerated, place on counter while oven preheats and add some cooking time.
If put in preheated oven in frozen state bake for at least an hour, maybe more.

Grandma got this recipe from the local newspaper. It was a first-place winner in the newspaper's recipe contest. Kara used to request it for her birthday. It was a special meal for us.
