Cake:
1 ½ c boiling water
1 c quick oatmeal
½ c butter (or ½ c applesauce)
1 c brown sugar
1 c sugar
2 eggs
½ t salt
1 ⅓ c flour
1 t soda
1 t cinnamon
1 t baking powder

Topping:
1 c brown sugar
1 c coconut
1 c pecans
½ c butter (softened)
¼ c evaporated milk
Pinch of salt

Cake:
Pour boiling water over oatmeal and let stand. Cream together butter, sugars, and eggs. Beat in cooled oatmeal mixture. Mix in sifted dry ingredients. Bake in greased 9x13 pan at 350 for 30 mins.

Topping:
Mix together all topping ingredients. Frost over warm cake and toast under the broiler until lightly browned.
