3 eggs
1 c cooking oil (1/2 c oil & ½ c applesauce)
2 c sugar
2 c grated zucchini
2 t vanilla
½ c chopped walnuts (optional)
3 c flour
1 t soda
½ t baking powder
1 t salt
1 t cinnamon

Directions:
Directions:

Preheat the oven to 325-Spray and flour 2 loaf pans. Cream together eggs, oil or applesauce, sugar, zucchini, and vanilla. Add remaining ingredients and mix well. Bake for 60 minutes at 325.
