1/4 cup Thai sweet chili sauce
1/4 tsp. sriracha
1 lb. shrimp, shelled and deveined
1/2 cup buttermilk
3/4 cup cornstarch
1/2 mayonnaise
canola oil for frying

Directions:
Directions:
1. In a small bowl, combine mayonnaise, chili sauce, and sriracha. Stir.
2. In a second bowl, add shrimp and buttermilk. Stir to coat all shrimp.
3. Remove shrimp from buttermilk and allow excess liquid to drain away.
4. Coat the shrimp in cornstarch.
5. In heavy skillet add 2 -3 inches of canola oil and heat to 375º (med.high)
6. Fry shrimp until lightly brown, 1 - 2 inches on each side.
7. Once fried, coat shrimp with the sauce.
8. Serve immediately.
