Buttermilk
1½ c. All Purpose Flour
2 Tbsp. Cornstarch
sprinkle of Garlic Powder, Onion Powder and Black Pepper

You can do this with fresh cut squash or use the canned summer squash recipe in the canning section of this book. Follow directions for your squash.

Fresh: Wash and cut your squash however you want either in sliced, wedges or chunks and place in the butter milk. Working in batches move your squash to the flour mixture and immediately fry once coated and oil is hot.

Canned: Drain the squash and rinse with cold water to remove the canning solution. Pat dry with a cloth or paper towel. Then dip in the buttermilk and then into the flour mixture. Fry immediately once coated and oil is hot.

You can also do a variation with cornmeal mixed into the flour mixture, just don't use as much flour.
