1 lb. dried black beans
1 T. olive oil
1 T. butter
1 large onion, diced
1 cup diced carrots
1 small can of diced green peppers
2 pkg. Sazon seasoning
2 T. minced garlic
1 lb. quarter-inch diced ham
3 heaping tablespoons of Better Than Bullion chicken base
2 qts. water
salt and pepper to taste

Garnishes:
sour cream
chopped green onions
shredded Mexican blend cheese
cilantro

Directions:
Directions:
1. Wash and sort beans.
2. Soak beans overnight in water.
3. Drain the beans and set aside.
4. Add olive oil and butter to a large stock pot.
5. Saute the onions, garlic, and carrots until onions are soft.
6. Add all other ingredients except for garnishes.
7. Cook for 45 minutes to an hour.
8. Adjust seasonings to taste.
9. Serve in bowls with garnishes as desired.

Additional chicken broth made from water and chicken base may be added if soup is too dry.

I usually mash about half of the beans with a potato masher about halfway through cooking time. At that point, you may need to add the additional chicken broth.

This is good served over cooked rice.
