Ingredients: 6 meaty pieces veal shanks, about 1 pound each 4 tablespoons olive oil Flour, seasoned with salt and pepper 1 cup chopped onion 2 ribs celery, chopped 2 carrots, sliced 4 cloves garlic, finely chopped 2 cups dry white wine 2 cups veal stock 6 tablespoons tomato paste 1/2 cup Porcini, (dried mushrooms), soaked in cold water for 30 minutes or 1 cup sliced fresh mushrooms 2-3 strips dried lemon peel salt and pepper to taste 2 tablespoons chopped parsley

Directions:Heat oil in large heavy kettle, dredge veal shanks in seasoned flour and brown on all sides. Add onion, celery, carrots, garlic and mushrooms. Saute 2 minutes. Pour in wine and stock, stir in tomato paste. Add lemon peel. Season with salt and pepper. Simmer over low heat, covered, for about 1 1/2 hours, stirring occasionally. Add additional stock or wine if needed. Remove lemon peel. Transfer to serving dish, sprinkle with chopped parsley or gremolata( a mixture of grated lemon zest, raw garlic and parsley) and serve with either mashed potato, polenta or any basic risotto. |
