1 1/3 C brown sugar
2/3 C. vegetable oil
1 egg
1 t. vanilla
1 cup buttermilk (1 cup milk with 1 t. lemon juice or vinegar, let set 5 min. )
2 1/2 C. flour
3/4 t. salt
1 t. baking soda
1/2 t. cinnamon
2 C. chopped rhubarb
1/2 C chopped nuts (optional)


Directions:
Directions:
Combine sugar and oil, blend in egg, vanilla and milk.
Combine flour, salt, cinnamon and baking soda and add to moist ingredients.
Add rhubarb and nuts. Pour into two well greased bread pans.
Topping:
1 T. melted butter
1/2 C. sugar
1/2 t. cinnamon
Mix together and add to top or put in between two layers and end with topping.

Bake 350° for 45 minutes.
Cool 10 minutes before removing from pan.
