3 c. mashed sweet potato
6 Tbsp. butter, softened
2 c. evaporated milk
1 c. sugar
2 eggs
1/2 tsp. vanilla
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Topping:
6 Tbsp. butter, softened
1/2 c. brown sugar
1 c. cornflakes
Directions:
Directions:
Combine sweet potatoes, butter, milk, sugar, eggs, vanilla, nutmeg, and cinnamon. Beat on medium speed until smooth. Pour into greased 9x13 dish and bake at 350ºF for 30 minutes.

For topping: Mix brown sugar and butter together. Add cornflakes and mix.

Spread topping on casserole and bake an additional 20 minutes or until casserole is set.
