8 oz pasta (penne, bowtie, etc)
1 pound raw shrimp, deveined, cleaned, and tails removed
1 1/2 Tbsp Cajun seasoning
1 Tbsp olive oil
1 Tbsp butter
1 cup heavy cream
1/2 cup parmesan cheese, finely grated (or other cheese)

Bring a pot of salted water to a boil.
Cook the pasta until al dente, according to package directions.
Reserve 1/2 cup of the pasta water. Drain the pasta
Combine the shrimp, Cajun seasoning, and olive oil in a bowl.
Heat the large skillet over medium-high heat.
Add the butter and allow it to melt.
Add the shrimp in a single layer and cook until golden brown on each side and cooked through at 145 degrees, about 3-4 minutes per side. Cook in batches to avoid crowding.
Transfer the shrimp to a clean plate.
Reduce the heat to medium-low
Add the heavy cream to the pan.
Scrape the bottom of the pan with a wooden spoon to incorporate any brown bits.
Allow the cream to bubble and reduce the heat to low.
Stir in the parmesan to melt.
Add the cooked shrimp and cooked pasta. Stir to coat.
Add the reserved pasta water a bit at a time to desired thickness
Serve.
