Ingredients: 1 or 2 pork tenderloins about 1/2 lb each 1 T oil 2-3 T lemon, lime, or orange juice (or 1 T of each) 2 t Italian seasoning 1 t garlic powder 1 t salt 1 t chili powder 1/2 t paprika 1/4 t black pepper

Directions:Preheat oven to 400º. Lightly grease a large casserole or baking dish. Pierce tenderloins all over with a fork and then rub with the oil Mix together all the dry ingredients and then pat it into the meat on all sides. Place in the baking dish and drizzle the citrus juice over the top. Bake at 25-35 minutes until browned & crispy. Spoon the juices over the meat. Allow to rest on a cutting board (or in the dish) for 5-10 minutes. |

Notes: We are conservative on spices, so I eliminated the 1/2 t cumin and changed the smoked paprika to plain paprika. My pork loins were larger, so I cooked the first 35 minutes at 400 and then lowered to 350 for another 30 minutes. I also applied this to the thick pork loin chops from Costco and baked (uncovered) for about 60-90 minutes. I used the juice of one large orange and it made a nice little sauce to spread over the pork loin.
