2 medium unpeeled red potatoes
1 cup diced red bell pepper
˝ cup coarsely chopped celery
1 tsp butter
2 Tbsp app-purpose flour
1 (14-14˝oz) can chicken broth
1 (15oz) can creamed corn
2 Tbsp sliced chives
1 (12oz) can fat-free evaporated milk
salt & pepper to taste
cooked, crumbled bacon

Directions:
Directions:
Cut potatoes and ham into cubes. Dice peppers. Heat butter; add peppers & celery. Cook 3-4 minutes. Stir in flour; heat until bubbly. Gradually add broth, milk & corn. Whisk until blended. Add potatoes. Bring to a boil; reduce heat. Cook, uncovered, 10 minutes, until potatoes are tender. Add ham. Heat through. Remove from heat. Stir in chives. Season. Serve topped with bacon.
