2lbs 80/20 ground beef (you can use pork/beef mix as well)
Olive oil for sauté
1/2 onion
8 garlic cloves
2 eggs beaten
1 cup Whole milk Ricotta cheese
1 cup Panko crumbs
1/2 cup chopped parsley
1 cup fresh grated Parmigiano
Tablespoon Italian seasoning
Salt and pepper to taste
Sauté onion and garlic until translucent. Let cool.

Mix Panko and Ricotta and let sit for 20 minutes. Then mix all ingredients in the ricotta mixture. Mix well and then add ground beef. Mix with hands. Don’t over mix! On lined baking sheet with parchment paper, form 2” sized meatballs. Makes 16 large meatballs.

Bake 12-15 minutes on 425 and then broil for 5-8 minutes.

Add to sauce and simmer for 30 minutes! They are delicious and so moist!
