*6 large red, yellow, or orange bell peppers
*1 lb. ground beef
*1/2 c. onion, chopped
*16 oz. can diced tomatoes
*1 can Rotel tomatoes
*1 c. minute rice
*1 c. water
*1 t. salt
*1 can black beans, rinsed
*1 t. Worcestershire sauce
*1 c. cheddar cheese, shredded

Preheat oven to 350 degrees. Cut tops from peppers, discard seeds & membranes. Chop enough of the pepper tops to make 1/4 c. Cook the whole peppers, uncovered in boiling water for about 5 minutes; invert to drain well. Sprinkle insides with salt. In a skillet, cook ground beef, onion, and chopped peppers til meat is browned and vegetables are tender. Drain off excess fat. Add undrained tomatoes, Rotel, black beans, uncooked rice, water, salt, Worcestershire, and a dash of pepper. Bring to a boil, reduce heat, cover and simmer about 20 minutes or until rice is tender. Stir in cheese. Stuff peppers with meat mixture. Place in baking dish(es). Bake covered for 30 minutes.
