Mary May's Crab Salad Recipe

1 can cream of mushroom soup
1 can crab meat
3/4 cup mayonnaise or miracle whip
1/4 cup finely chopped celery
1- 8oz package cream cheese
1 package Knox unflavored gelatin
3 tablespoons cold water
1/4 cup finely chopped green onions

Directions:
Directions:
In saucepan mix cream of mushroom soup. Add one soup can of water. Heat until heated through. Set aside. Add gelatin to the cold water and mix. Add gelatin mixture and cream cheese to heated soup. Add remaining ingredients and mix well. Place in buttered mold or an 8x8 or 8x9 inch pan. Chill overnight or until set.

***If you like lots of crab flavor you can add the crab liquid to replace part of the water that is added to the soup.

Serve with crackers.

When Herman and I were first married in 1981 we went to see Aunt Mary. She was living in Hobart at the time and Herman's sister Lisa went with us. The first night we were at their house Aunt Mary served us this crab salad. She had froze it and was worried it would not be as good as fresh. I can assure you it was excellent. I asked for the recipe and have been making it ever since. Also on our trip Uncle Earl took us fishing and I think that was the first time I had caught so many fish. This is one of my fondest memories of visiting with the Mays.
