Buckeyes:
1 jar (18 oz.) creamy peanut butter (2 cups)
1 stick butter, softened (½ cup)
1 tsp. vanilla
1 lb. confectioner’s sugar (3¾ cups)

Chocolate Coating:
12 oz. pkg. semi-sweet chocolate chips
1 T. shortening

Buckeyes:
Mix the above ingredients until smooth. Shape into small round balls and dip into chocolate coating leaving a small section uncoated to resemble an eye. I used a toothpick to pick up the peanut butter balls and to partially dip into the chocolate. This works pretty good.

Chocolate Coating:
Melt the chips and shortening together in top of double boiler and use to coat the peanut butter balls. Once dipped, place candy on a waxed paper-lined baking sheet and refrigerate until set.

These are really good. I make them at Christmas time and often use them along with other candies for gifts.
