vegetable oil
10+ bone-in, skin-on chicken thighs, browned
2+ large onions, chopped
3 large carrots, thinly sliced
1 lb green beans, snapped
12+ c chicken broth
salt, pepper, Tony's, celery seed to taste
3 c rice, cooked

Directions:
Directions:
In a small gumbo pot,
sear unseasoned chicken.
In drippings, saute vegetables.
Add chicken, broth, seasonings.
Bring to a boil, simmer for 45 min.
Debone chicken & replace.
Add rice. Simmer 20+ minutes.
