4 cups mashed potatoes
1 large onion
3 cloves garlic
¼ cup flour
1-2 cups chicken cooked and shredded
or chopped
1 T Dijon mustard
1 t lemon juice
1 T fresh rosemary
½ t curry powder
1 cup frozen peas and carrots
¼ cup parmesan cheese, shredded

Directions:

Heat oven to 350º. In large pan, melt 1 T butter over medium heat. Add onions and garlic and cook for about 5 min. Stir in flour. Whisk in milk, Dijon, lemon juice, rosemary and curry powder. Continue to whisk constantly until it reaches a thick consistency. Add in chicken and frozen vegetables and stir for another 3-5 min. Spread chicken mixture in a 1.5 quart casserole dish. Spread mashed potatoes on top of chicken mixture and top with cheese. Bake for 25-30 min until heated through and cheese begins to brown.
