16oz dry navy or pinto beans
8 cups water
1 tsp salt
8 slices bacon
1 yellow onion, finely chopped
½ red or green bell pepper, cored, seeded, finely chop
⅔ cup barbecue sauce store-bought or homemade
½ cup ketchup
2Tbsp spicy brown mustard
¼ cup cider vinegar
1 tsp liquid smoke
½ cup light brown sugar,
½ cup water

Directions:
Add beans, water & salt to instant pot. Cook on manual (high pressure) 25 min. Allow pressure to naturally release. Remove lid; pour beans in colander. Rinse with cold water. Set aside. Set Instant Pot to sauté setting. Add bacon; sauté a few min until starts to get golden brown, tossing & scraping down bottom of pot. Drain some grease. Add bell pepper & onion; cook until tender. Turn IP off. Add bbq sauce, ketchup, mustard, vinegar & liquid smoke to pot; stir well. Add brown sugar, water & beans; stir. Secure IP lid, close steam valve; cook Manual (high pressure) 15 min. Natural release pressure. Carefully open lid, gently stir mix to combine. Enjoy!
To use canned beans: when time to add beans, substitute 56oz canned pork & beans.
