1 large head cauliflower, chopped
1 ½ cups shredded reduced-fat Cheddar cheese
½ cup bacon bits (such as Hormel®)
½ (8oz) package low-fat cream cheese
½ cup low-fat sour cream
¼ cup minced green onions
3Tbsp butter
salt & ground black pepper to taste

Directions:
Preheat oven to 350. Bring saucepan of water to boil. Add cauliflower; cook until tender, but not overly soft, 3-5 min. Drain well; transfer cauliflower to large bowl. Mash, using potato masher, leaving some chunks. Reserve ½ cup Cheddar cheese & 1Tbsp bacon bits. Mix remaining Cheddar cheese, remaining bacon bits, cream cheese, sour cream, green onions, butter, salt & pepper into mashed cauliflower in bowl. Transfer mix to 8” square baking dish. Sprinkle reserved cheddar cheese & bacon bits on top. Bake until hot and bubbly, 30-35 min.
