2 Tbsp extra-virgin olive oil
½ cup chopped fennel
1 med carrot, sliced into rounds
1 sm onion, chopped
2 garlic cloves, finely chopped
Kosher salt & freshly ground black pepper
4 cups low-sodium chicken broth
½ cup broken spaghetti
2½ cups shredded cooked chicken
¼ cup grated Parmesan + extra for serving
2 Tbsp chopped fresh flat-leaf parsley

Directions:

Heat oil in large saucepan over med heat. Add fennel, carrot, onion, garlic, ¼ tsp salt & few grinds of pepper. Cook, stirring occasionally, until tender, about 8 min. Add broth; bring to boil. Reduce heat to a simmer; stir in pasta. Cook until pasta is just tender, about 7 min. Add chicken; simmer until heated through. Remove from heat; stir in Parmesan & parsley. Season with additional salt & pepper; sprinkle with more Parmesan.
