1 dozen eggs (or for low fat…1 small container whites only and 1 small cont. egg substitute)
14-oz artichoke hearts, chop, kind in oil best
14-oz can petite diced tomatoes, drained
2 cup plain free sour cream
2 cup 2% Colby-jack shredded cheese
2 cups 2% cheddar shredded cheese
1 tsp each: garlic, fresh cilantro, fresh chives or green onions

Spray 13x9 baking dish with cooking spray. Drain tomatoes; spread even layer on bottom of baking dish. Drain artichoke hearts, dice/rough chop & spread even layer on top of tomatoes. In separate bowl, combine eggs & sour cream; mix until combined. Add cheeses, garlic & herbs; stir until blended. Pour over tomatoes & artichokes. Sprinkle with paprika. Bake uncovered at 350 for 50-60 min until golden brown. Let stand 5 min to deflate before cutting.
