1½ -2lbs flank steak
½ cup olive oil
⅓ cup reduced sodium soy sauce
¼ cup balsamic vinegar
2 Tbsp lemon juice
2 Tbsp brown sugar
1½ Tbsp Worcestershire sauce
1 Tbsp Dijon mustard
1 Tbsp EACH onion powder, garlic powder
1 tsp EACH paprika, pepper, red pepper flakes, dried dill
½ tsp EACH dried oregano, dried rosemary, ground coriander

Whisk marinade ing in ziploc bag. Reserve 2Tbsp to use later. Add steak, press out excess air & seal. Massage marinade into steak with hands through outside the bag.

Marinate in refrigerator 2hrs up to 12hrs. Preheat grill. Grill steak 5-6 min per side. Remove steak to cutting board; let rest 10 min before slicing. Slice steak into thin strips against grain (perpendicular to the long strands). Drizzle with 2Tbsp reserved marinade.

TIPS AND TRICKS
• Pound steak to an even, thin thickness to tenderize.
• Don’t marinate longer than 12hrs or muscle fibers can break down & become mushy.
• Bring steak to room temp before cooking by letting sit on counter for 30-60 min.
• Clean grill very well before cooking for beautiful grill marks.
• Grease grill with oiled paper towels using tongs.
• Don’t add steak until grill is hot to achieve a beautiful sear.
• Only flip/touch your steak once for the perfect caramelized crust.
• Only use tongs to flip meat; fork will pierce meat & will lose juices & tenderness.
• Don’t overcook or steak won’t be juicy. Use meat thermometer to check for doneness.
• Let steak rest 10 min before slicing to reabsorb juices accumulated in middle of steak.
• Slice steak across the grain to shorten the muscle fibers for tender steak.
• Steak doesn't just have to be served plain - TONS of ways to use flank steak!
HOW TO COOK FLANK STEAK IN THE OVEN: Broiling flank steak mimics high directional heat of grill. Place on baking sheet. Broil 8” away from broiler 6-8 min each side until it reaches desired temp.
HOW TO COOK FLANK STEAK ON THE STOVE: Pan sear flank steak but unless you have large grill pan, your steak will not fit & need to be cut in half & cooked in two batches. Heat 1Tbsp olive oil in large cast iron skillet over med-high heat. Cook for 6-8 min per side until it reaches desired temp.
