12oz elbow macaroni pasta
Salt for pasta cooking water
12oz evaporated milk
2 large eggs
6oz havarti cheese (2 cups grated)
6oz colby jack cheese (2 cups grated)
¾ tsp sea salt or to taste
⅓ cup sour cream

Directions:
Directions:
Bring large pot of salted water to boil. Add pasta; cook according to package instructions. Reserve ¾ cup pasta water, then drain remaining water; set pasta aside in pot.
In med saucepan, combine 12oz evaporated milk, 2 eggs, both grated cheeses & ¾ tsp salt. Place saucepan over med/low heat; cook 6-8 min, whisking constantly*, until completely smooth & thickened. As soon as it has visibly thickened, remove from heat. Do not overcook or it may curdle. Off the heat, whisk in ⅓ cup sour cream; stir in drained pasta. Season with salt to taste. If sauce gets too thick, you can thin it out with some of your reserved pasta water.**

Recipe Notes: *This recipe is quick & easy but DO NOT walk away from the cheese sauce. Whisk constantly while it is on the stove to keep it smooth and creamy. ** Keep in mind sauce will thicken more as it cools so you don't want it to be overly thick right off stove.
