3lbs new potatoes
1 yellow onion, quartered
½ lb bacon, diced
1 large red onion, diced
¾ cup cider vinegar
1Tbsp Dijon mustard
¼ cup canola oil or olive oil
Salt & freshly ground pepper
8 green onions, thinly sliced
¼ cup chopped fresh parsley leaves

Preheat grill to high. Place potatoes in large pot with yellow onion; cover with cold water. Cook, on grates of grill, or on burner, until tender. Drain, discard onion; cut potatoes in cubes when cool to handle. Place potatoes in bowl; cover to keep warm. Place large sauté pan on grates of grill. Add bacon; cook until crisp. Remove bacon with slotted spoon; drain on paper towel. Add red onion to bacon fat; cook until soft, 3-4 min. add vinegar & mustard; cook 2 min. Whisk in oil; season to taste, with salt & pepper. Add hot dressing to potatoes; toss to coat. Fold in
