Ingredients: 1lb boneless chicken breasts (or thighs) 1 cup chicken bone broth or low-sodium chicken stock 1 tsp unrefined sea salt ¼ tsp freshly cracked black pepper ¼ tsp garlic powder

Directions:Pour bone broth in bottom of Instant Pot; place chicken breasts into the broth; sprinkle chicken with salt, pepper & garlic powder. Place lid on Instant Pot; set valve to sealing.
*FRESH CHICKEN BREASTS: Cook high pressure/manual 12 min. FROZEN CHICKEN BREASTS: Cook on high pressure/manual 18 min. After cooking, allow the pressure to naturally release for 10 min before quick releasing the remaining pressure carefully by turning the steamer valve to venting. Using tongs, transfer the chicken breast to a plate or cutting board and shred while warm with two forks. Alternatively if you have a stand mixer you can transfer the chicken to the mixer bowl fitted with the paddle attachment and shred the chicken by turning on the mixer to med speed. Once shredded toss chicken back through the broth until fully coated. Eat immediately or store (with the broth) in sealed container in fridge for up to 3-4 days. *Chicken breasts come in a variety of sizes, here is guide to follow based on size you are using (applies to fresh not frozen chicken breasts only): -10 min at high pressure/manual for chicken breasts 4-7 z in size. -12 min at high pressure/manual for chicken breasts 8-12oz in size. |
