1-2 racks pork ribs
1 tsp salt
1 tsp freshly ground black pepper
1 tsp garlic powder
1 tsp chili powder
1 tsp onion powder
1 tsp light brown sugar
1 cup water
1 cup apple juice, or ¼ cup apple cider vinegar
1 tsp liquid smoke, optional*
1 cup barbecue sauce, homemade or store-bought

Remove membranes from back of ribs. Rub seasonings over both sides. Place wire trivet rack in bottom of instant pot. Add water, apple juice (or apple cider vinegar) liquid smoke (opt, but recommended for great smokey flavor). Place ribs upright, with meat side facing out. If using one large rack of ribs, then circle them around pot. Secure lid & close vent. Press “manual” or “pressure cook”; cook high pressure 25 min. When timer beeps, allow pressure to naturally release 15 min, turn valve to quick release. Carefully remove ribs to large, foil-lined baking sheet & slather in BBQ sauce. Opt: broil in oven for 2-3 min to caramelize bbq sauce. *For spare ribs, add 5-10 min to cooking time (high number for higher altitudes & “fall-off-the-bone” ribs, lower number for lower altitude & tender ribs).
