2 quarts whole milk
1 cup arborio rice (do not rinse the rice)
1 cup sugar
2 Tbsp unsalted butter
1 tsp vanilla
¼ Tsp salt
2 large eggs
1 cup heavy cream
½ tsp cinnamon

Directions:
Directions:
Place milk, rice, sugar, butter, vanilla & salt in heavy 4 quart saucepan. Bring mix to a boil under moderately high heat, after it comes to boil, reduce heat; simmer uncovered stirring frequently until rice is very tender (about 1 hour).
When one hour is up remove pan from stove. Whisk eggs in med bowl.
Add 1 cup of rice mixture from pan to bowl with eggs while whisking. Stir mixture back into pan with pudding, then stir in the cream.
Pour rice pudding into 13x9" glass or ceramic baking dish with a 3 quart capacity. Sprinkle pudding with cinnamon, refrigerate rice pudding covered for 3 hours.
