2 eggs
1 can whole kernel corn drained
1 box Jiffy Corn Muffin Mix
8 oz. cheddar cheese shredded
1/2 cup butter melted
1 can cream style corn
1 cup sour cream

Directions:
Directions:
Apply cooking spray to casserole dish. In a bowl, beat 2 eggs. Place melted butter in the prepared casserole dish and spread evenly. Add the corn into the casserole dish and spread evenly. Add the sour cream to the eggs and until well blended. Add half of the cheese, to the egg mixture and stir well. Add the muffin mix and then put over the corn. Sprinkle additional cheese on top. Cook for about an hour at 175. Allow to rest for a few minutes before serving.
