5 cups fresh blueberries
1 cup sugar
2 tsp cinnamon
juice and zest of 1 lemon

Directions:
Puree the blueberries and place in a crockpot with the remaining ingredients.
Cover and cook on low for 1 hour.
Prop the lid up with a wooden spoon to allow excess liquid to evaporate.
Continue cooking on low for 4 - 5 more hours, checking the thickness of the blueberry butter every hour.
When it mounds nicely on a spoon and does not easily run off, it is done.
Once thickened, ladle into an airtight storage container.
Store in the refrigerator for up to 2 months or in the freezer for up to 1 year.
