Dad's Enchiladas Recipe

3-5 lb. chuck roast or sirloin tip if on sale
24-30 oz salsa
two onions
lard (or shortening or oil)
3 dozen corn tortillas

4 small cans green chiles chopped
3 small cans black olives chopped
2-3 bunches of green onions, chopped (use white and green)
32 oz shredded cheddar cheese-save some for topping

Directions:
Directions:
In crockpot or stew pot place roast. Chop up onions and put in and then cover roast with salsa. Cook on high 4 hours in crockpot, or bring to boil in stew pot and then cover and reduce heat to medium and cook for 2-3 hours. Add salsa as need if using stock pot to keep roast covered. Remove roast from crockpot and shred meat.

Fry tortillas until beginning to firm. Place in salsa for just a minute to soften. Add remaining ingredients and roll up. This works best with two people, one frying and one assembling. Otherwise you have to do just a few at a time.

Place on baking sheets or shallow pans. Cover with remaining salsa drippings from crockpot, Sprinkle with cheese and bake at 350º for 30 minutes.
