2 cups fresh or frozen rhubarb
2 cups finely chopped onion
2 1/2 cups packed brown sugar
1 cup vinegar
1 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground allspice
1/4 tsp. ground cloves
1/2 tsp. pepper

Directions:
Directions:
In a saucepan, combine all ingredients.

Cook on medium heat for 30 minutes or until thickened and stirring occasionally. Keep the heat low so it doesn't burn.

Cool and store in the refrigerator. Small jelly jars are great or even freezer bags to keep it fresh. It lasts forever in the fridge.

Relish is a nice condiment to poultry, and beef.
