4 cups fresh pineapple cut in cubes
3 T melted butter
1/2 c brown sugar
1/4 cup dark rum
2 tsp vanilla extract

Batter
1 1/3 c flour
2/3 c sugar
3 tsp baking powder
1/4 t salt
1/4 finely shredded coconut
3/4 c milk
1 egg
1/3 c softened butter
2 t vanilla extract

Directions:
Directions:
Combine pineapple, melted butter, brown sugar, rum and vanilla extract. Place in 9 x 9 pan.

Sift together flour, sugar, baking powder, salt, coconut. Add milk, egg, softened butter and vanilla extract. Mix batter until smooth, pour over pineapple mixture. Bake at 350º for about 40 minutes or until toothpick comes out clean. Serve with whipped cream or vanilla ice cream.
