6 medium potatoes, skins on
3 carrots
4 hardboiled eggs
1 cup canned peas
3-4 small cucumbers (or dill pickles if fresh aren't available)
1 polska kielbasa
1/2 onion
3 tablespoon minced fresh dill
about 5 tablespoons mayo
salt and pepper to taste

This is pretty much the Russian version of potato salad. The important thing here is to dice all the ingredients VERY small, a little less than a centimeter square. Because there are so many ingredients, it's important to have the pieces be small so that each bite includes a little bit of everything.

We generally boil the potatoes and carrots whole, and remove skins after the fact. Boil the potatoes and carrots. Potatoes will be boiled about 20 minutes if medium sized, longer if larger. You're going for firm potatoes here, just like with an American potato salad. When my Dad makes this recipe, he dices the potatoes and carrots ahead of time, and I can't tell a difference, but I always make it the way my mother-in-law taught me. Once your boiled items are cooked (carrots, potatoes, hardboiled eggs), dice everything but the peas to about 1 centimeters square pieces. Onions can be minced finely. Combine all ingredients to a large bowl, and add the mayo to taste, about 5 tbsp. Again, you're going for a potato salad consistency here.

Salt and pepper to taste, and let sit in the fridge for at least an hour before serving.
