4 cups finely chopped rhubarb
4 cups finely chopped apples (any cooking variety)
1/3 cup stevia ( substitute with more sugar if you wish)
1/3 cup white sugar
2 good tbsp. corn starch
1 tbsp. minute tapioca

Topping
1/2 cup all purpose flour
1/2 cup brown sugar
1/2 cup oatmeal
1/3 cup soft butter or margarine
1/2 tsp. cinnamon
1/4 tsp. salt

Gluten Free Option:
Substitute a GF flour and make sure your oatmeal is GF

Directions:
Directions:
Prepare rhubarb and apples and put in a large bowl.
In a small bowl mix sugar, stevia, cornstarch & minute tapioca.
Mix well and stir into prepared fruit.
Mix all together. Let sit for 15 min.

Prepare topping
Mix all ingredients together until it is crumbly.
You may use your fingers.

Grease a 9 X 9 baking dish or casserole of same size.
Put fruit mixture in and bake in a 350' oven for 15 minutes.
Evenly spread crumb mixture on top of fruit and bake another 45 minutes until fruit is tender and starts to bubble around edges.
Baking time may vary, so watch during the last 10 minutes.
Can be served warm, but it will be a better consistency if it cools for several hours so tapioca can thicken juice. Crisp can be served with ice cream or an old cheese.

I use stevia to save using so much sugar.
You can use other fruits if you wish.
If using frozen fruit be sure and thaw and drain any extra juice.
