Line a 15" x 10" baking sheet with heavy duty aluminum foil. folding a bit over the edges of the pan. Spray with cooking spray. Place graham crackers in a single layer in the pan, covering the entire pan bottom. Set aside. Put brown sugar and butter in a small sauce pan. Bring to a boil over medium heat. Boil for 4 minutes (use your timer), stirring constantly. Immediately pour brown sugar mixture evenly over graham crackers. Tip pan to evenly distribute it over the crackers, if necessary. Bake for 8 minutes. Remove from oven and immediately sprinkle chocolate chips evenly over the brown sugar layer. Let sit for about 2 minutes until chocolate chips are shiny. Using an offset spatula or table knife, spread chocolate chips evenly. Sprinkle chopped nuts over the top of the chocolate layer. Let sit for about 2 hours (or refrigerate until chocolate is set). Using the foil edges, lift entire panful out of the pan. Peel off the aluminum foil. Break into pieces (like peanut brittle). Store in an airtight container in the refrigerator.
