1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
2 cups flour
2-1/2 cups shredded coconut
2 cups old fashioned oatmeal
1 cup chopped walnuts of pecans (I don't usually use them, but the original recipe calls for them)

Preheat oven to 350º. Line your baking sheets with parchment or if not using parchment paper, grease lightly with shortening - do not use cooking spray they will spread too much.

Cream butter and sugars together until fluffy. Add eggs, beat well. Add vanilla. In a separate bowl whisk together the flour, baking powder, baking soda and salt. Add flour mixture to butter/sugar mixture, mix until well combined. Stir in coconut and nuts, if using, then stir in oatmeal.

Drop on cookie sheets by teaspoonfuls, about an inch apart. Bake 12-14 minutes, just until the edges begin to brown - don't overbake, you will have a crispy cookie. If you take them out just as the edges brown, even if the top looks not quite done, you will have a chewy cookie. Remove cookies to a cooling rack immediately after taking out of the oven.

These are my husband Jim's favorite cookies. I have found that even people who don't really like coconut enjoy these cookies.
