24 shucked oysters, well drained…
1 1/4 cups flour…
1 1/2 t salt…
3/4 t paprika…
1/2 t pepper…
1/2 t cayenne…
2 eggs…
2 T cold water…

Directions:
Directions:
In a deep fryer heat canola or vegetable oil to 375º…

In a medium bowl mix the flour, salt, paprika, pepper and cayenne together…

In a smaller bowl beat lightly the eggs and water…

Dip the oysters in the egg mixture, now coat them with the flour mixture…
Let them dry on a wire rack for 10 minutes, do not let them the oysters touch one another…
Shake them to remove any excess flour and once again dip them in the egg mixture and cook in batches in the fryer for 3 minutes or when they turn a golden brown…
Trans fer the oysters with a slotted spoon to paper towels and sprinkle them with salt…
Continue this until all oysters are fried….
Serve the oysters with lemon wedges and tartar sauce….
ENJOY!
