4 T. Butter
1/2 c. Flour
1/2 Onion, diced finely
1 large can Green Enchilada Sauce
1 can White Beans
1 can Black Beans
1 can Corn
1 Bell Pepper
About 4 cups Chicken Broth
Cilantro to taste
As much cooked, shredded chicken as desired

Optional Toppings:
Cilantro
Tortilla strips
Cheese
Sour Cream
Avacado
Pico

Directions:
Directions:
In a large pot, melt butter. Add onion and cook until it starts to get soft. Add flour and whisk to form a roux. Allow to cook for about 1 minute. Slowly add enchilada sauce. Add about 1 cup of chicken broth, as well as beans, corn, bell pepper, cilantro, and chicken. Continue adding chicken broth until desired consistency is reached. Heat through and serve warm with toppings.
