1 sweet potato, russet potato or Yukon potato (cubed)
2 bell peppers, sliced
1 zucchini, sliced in half rounds
4 boneless, skinless chicken breasts
4 slices bacon
2 teaspoons kosher salt
¼ teaspoon black pepper
1 teaspoon chili powder
1 teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
2 tablespoons olive oil
½ cup barbecue sauce, divided

Directions:
Directions:
Light the grill to medium-high heat. Lay out 4 large pieces of heavy duty aluminum foil (or doubled-up regular foil).

Place equal amounts of potatoes, bell peppers and zucchini on each piece of foil.

Combine salt, pepper, chili powder, paprika, onion powder and garlic powder in a small dish.

Drizzle olive oil on each chicken breast. Sprinkle seasonings over chicken, saving enough to sprinkle over the veggies. Rub seasoning and oil into chicken breasts.

Sprinkle remaining seasoning on veggies and lightly toss until evenly coated.

Place a chicken breast over veggies in each foil section. Brush breasts with half of bbq sauce. Place 1 piece of bacon on top of each breast. Wrap up each foil packet. Be sure to seal completely.

Grill packets for 15-20 minutes until the chicken reaches an internal temperature of 165º and the potatoes are cooked through.

For oven baked packets, bake at 400º for about 20-25 minutes or the internal temperature reaches 165º. For extra browning, bake chicken breasts uncovered for 2-3 minutes at the end of baking.

Brush remaining bbq sauce on chicken before serving.
