4 cups corn
1 red pepper diced
1 jalapeņo seeded and diced
1/2 red onion diced
1/2 cup cilantro chopped
1/4 cup cortina cheese (I used Mexican cheese)
1/3 cup mayonnaise
1 teaspoon chili powder
1/2 teaspoon paprika
Juice of whole lime

Directions:
Directions:
1. In a large bowl combine the corn, bell pepper, jalapeņo, red onion, and cilantro.
2. In small bowl combine Mayo, chili powder, paprika, and lime juice. Mix thoroughly and add to large bowl of corn mixture.
3. Garnish with additional cilantro and cheese if desired.
