1 tablespoon olive oil
½ cup chopped onion
2 teaspoons minced garlic
3 (14.5 ounce) cans diced tomatoes, not drained
2 cups vegetable or chicken broth
2 tablespoons brown sugar
Salt and pepper to taste
½ cup sour cream or half-and-half, at room temperature
¼ cup chopped fresh basil, or 1 tablespoon dried basil

In a large pot, heat olive oil over medium-low heat. Add onion and sauté about 3-5 minutes, or until tender. Add garlic and cook about 30 more seconds.

Add tomatoes, broth and brown sugar. Bring to a boil, and then reduce heat to low. Simmer uncovered over low heat about 15 minutes.

Using an immersion blender (or regular blender in batches) to purée the soup until desired consistency.

Stir in the cream and basil until we’ll combined. Serve warm.
