½ lb. ground beef
½ lb. ground Italian or hot sausage
1 yellow onion, chopped
1 T. olive oil
3 cloves garlic, minced
2 T. tomato paste
24 oz. marinara sauce
¼ t. crushed red pepper flakes
2 T. fresh parsley, chopped or 2 t. dried parsley
½ t. dried oregano
1 t. dried basil
7 c. chicken broth
9 lasagna noodles (or other desired pasta)
Salt and pepper, to taste
1 c. shredded mozzarella cheese
10 oz. ricotta cheese
½ c. freshly grated parmesan
Fresh basil, optional

Directions:
Directions:
In large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper as you cook. Drain grease and remove meat from pot.

Heat olive oil in large pot over medium heat. TSS in diced onion and sauté about 5 minutes, stirring occasionally. Add garlic and cook for a couple of minutes.

Stir in tomato paste, marinara sauce, spices, and broth. Return meat to pot.

Bring to a boil, then add lasagna noodles, broken into fourths, to pot and reduce heat to medium-low and cook, stirring occasionally until noodles are tender.

In a small bowl, stir together mozzarella, parmesan, and ricotta cheeses.

Ladle hot soup into bowls, and dollop a scoop of cheese mixture on top. Garnish with fresh basil, if desired.
