Ingredients:  
3 Ripe Tomatoes, diced
1 Carrot, diced
2 T. White Onion, diced
1 Jalapeņo, diced
Cilantro, diced
1 1/2 Limes
1 Capful Vinegar
1 t. Salt

Directions:
Directions:
In a bowl add;
Chopped carrot, Chopped onion, Chopped jalapeņo,
Chopped cilantro, squeeze the limes over the chopped vegetables, add vinegar & salt. Stir to mix, set aside.

Chop the tomato into a small dice, set aside.

After about 10 minutes, add the tomato to the rest of the ingredients. Mix. Allow to rest 15 minutes. Best to serve the following day.
