1/2 cup unsalted butter
4 Tbsp unsweetened cocoa powder
2 cups granulated sugar
1/2 cup milk
1/8 tsp salt
3 cups quick cooking oats
1/2 cup peanut butter, crunchy
1 tsp vanilla extract
flaky sea salt, (optional) for garnish

Directions:

Line a baking sheet with parchment paper
In a medium saucepan, over medium heat, combine the butter, cocoa pwd, sugar, milk, and salt
Bring the mixture to a boil over medium heat, stirring occasionally, and cook for about 1 minute
Remove the mixture from the heat.
Stir in the oatmeal, peanut butter, and vanilla until combined. The mixture should begin to thicken.
Using a spoon or ice cream scoop, drop about 1-2 Tbsp of the mixture at a time on the prepared baking sheet, flattening them slightly.
Sprinkle each cookie with sea salt, if desired, and allow them to cool completely, about an hour.
