4 cups fresh baby spinach
1 medium granny smith apple, cored and sliced thin
1/4 cup thin slices of red onion
2 T snipped, dried, tart cherries
1/4 cup thyme dijon vinaigrette
1/2 cup crumbled feta or blue cheese

Vinaigrett:

1/4 cup olive oil
1/4 cup vinegar (white or balsamic)
2 T snipped fresh thyme or 1/2 tsp dried thyme
1 tsp dijon style mustard

Directions:
Directions:
In a screw-top jar, combine all vinaigrette ingredients. Shake well to mix. Chill up to 1 week. Shake before serving.

When ready to serve, toss together all salad ingredients. Toss gently with 1/4 cup vinaigrette.
