2 tbsp. olive oil
2 clove of garlic
2 tsp. lemon zest
2 tsp. salt
1 to 1.5 lb. scallops
1 cup Limoncello
4 tbsp. butter
2 tbsp. heavy cream

Directions:
Directions:
1. Put oil in a medium size skillet and set over medium-high heat. When oil is hot, add garlic and cook, stirring constantly for about 10 seconds.

2. Stir in lemon zest and salt. Add scallops and sautê about 2 minutes. Turn scallops over and cook about 1 minute until just barely cooked through. Transfer scallops to a serving dish and set aside.

3. Reduce any juices left in the pan and then add limoncello. Simmer until volume is reduced by half. Whisk in butter and cream. Pour sauce over scallops and serve immediately.
