1 stick unsalted butter; 3/4 pound feta cheese, crumbled; 8 oz. pkg. cream cheese, softened; 2 cloves garlic, minced; 1 shallot; 2-4 tbsp dry vermouth; ground white pepper and or hot pepper sauce; 1/2 c pine nuts, toasted; 8 oz. sun dried tomatoes, softened and minced; 1 c pesto

Combine butter cheeses, garlic, shallot, and vermouth in food processor with metal blade and process until smooth.

Season with pepper and pepper sauce

Oil a 4-5 c straight sided mold, bowl or pate terrine. Line with plastic wrap

Layer all ingredients in any order you wish. I start with pine nuts, then sun dried tomatoes, pesto and cheese mixture. Repeat until mold is full

Fold the plastic wrap over the top and press gently to compact the layers

Refrigerate until firm, at least 1 hour. Invert onto platter, remove plastic and enjoy!
