1 c water;
1 c flour;
1 c gruyere, shredded;
1 stick butter;
3-4 eggs plus one egg white;
salt;
pepper

Directions:
Directions:
Place water in sauce pan with stick of butter and salt and pepper

Bring to boil until butter melts

Remove pan from the stove and add flour, mixing well and vigorously with a wooden spoon until mixture pulls away from the sides of the pan. Let cool 10 minutes

Add 3 or 4 eggs, one at a time, mixing well after each addition with wooden spoon. Mixture should be loose but not runny. Then add one egg white.

Add shredded cheese and mix well again.

Drop by teaspoon on sheet pan covered with parchment paper or silpat. Add a sprinkle more cheese on top of each round.

Bake at 425' for 10 minutes. DO NOT OPEN OVEN DOOR, then turn heat down to 350' for 15 more minutes or until golden brown
